Mathias Tibesigwa, a driving instructor, advises short drivers to always push their driver seats forward to enable their feet touch the pedals but also use cushions or adjust your seat to view ahead.“When you do not push the driver seat forward and you choose to only steer as you view where you are going, there is a likelihood that at some point you will stretch your neck. By so doing, your feet lose contact with the pedals. At the end of the day, you could fidget and step on the accelerator thinking it is the brake or clutch or step on the brake thinking it is the accelerator as you drive forward or control the car,” Tibesigwa explains.
The effort is worth it to bring the tradition of wood cooking into the modern world. “The oven is special,” said Josh.
The prevailing myth about Los Angeles pizza is that there is nothing prevalent about it. In New York, a good pizzeria can serve as a neighborhood welcome sign; in L.A., that mantle is more likely to be carried by a taco truck (or five). For decades, the city’s pizza culture was tied to the unrepentant iconoclasm of California Pizza Kitchen’s barbecue chicken pizza and Wolfgang Puck’s smoked salmon pizza at Spago. Even the city’s most iconic modern pizza, from baking master Nancy Silverton’s 12-year-old Pizzeria Mozza, was more or less a happy accident. Mozza, with an original style that took inspiration from both Naples and Rome but more from Nancy’s creative energy, blazed a trail of national respectability for L.A. pizza. In 2011, Steve Samson’s Sotto and Bez Compani’s Mother Dough (which closed in 2015) would carry the torch, serving some of the best Neapolitan-style pizzas in the city, but it would take a decade for the Silverton trail to become its own interstate highway.

The irony is not lost on me that while people say they get the ‘hot-n-ready’ pizzas because they don’t want to wait, a top-quality pizza is cooked in ninety seconds flat–faster than the time it takes to put the sauce and toppings on! Is that not the very epitome of ‘fast food’?
