That would be Ambrogio15, a Pacific Beach eatery that expanded over here with its Milan-inspired, organic flour pizzas, baked in a red dome pizza oven. Whereas American-style pizza spots would struggle to produce a “quick lunch,” Ambrogio’s pies take little time to cook, because their crusts are exceedingly thin.

Some of the best pizza in Los Angeles can be found in an empty lot in the back of a wine bar. It’s open only once a week, for four hours (or until it runs out of dough), and it’s nestled between the Thai Town and Little Armenia neighborhoods of Hollywood, where a pizzaiolo and his home-built, wood-fired dome oven (made in a Charleston backyard, of all places) spits out upward of 70 pies over the course of the night. It’s often gorgeous: Neapolitan in technique, but with the spirit of a sturdier New York pizza (as in, the core will not dissolve into a tomatoey pool after the first slice). And yet, every week, an Armenian mother will step out from her balcony adjacent to the lot and gaze down upon the action. Every week, she offers her consult: Let me show you how to make real pizza. Thus far, it’s been an empty threat. She’s never actually come down. Perhaps intuition tells her there’s no need.

This downtown retailer was originally in the Blue Dome District, then moved to The Boxyard. It closed in August. 

Other long haul airlines are following American’s lead, and it may be only a matter of time when they all do, because in a coach class cabin that can add as many as 20 or more seats, which is real money.

Every menu at Ken’s Artisan Pizza lets you know the tables and bar were fashioned out of Doug fir salvaged from Portland’s former "Million Dollar Playground," the Jantzen Beach Amusement Park. That fun fact should prime you for the thrills of the sometimes unexpected flavor combinations coming out of dough master Ken Forkish’s Le Panyol oven. While it’s easy to go straight for the pies with their charred and chewy crusts, start with seasonal vegetables ($12) that also get a turn in the wood-fired dome for a quick singe before they’re lightly dressed.

Good points here, but what the oven does for me is twofold: 1) intense heat of nearly 450°C which bakes the pizza in less than 2 Minutes 2) relaxation: I like the whole process from chopping wood to eating the selfmade pizza.
